THE MUSIKILI SCHOOL ART EXHIBITION - went very well, particularly for our local "budding" artists and, of course, the  old timers.   It was great to see ex Musikili School pupils, like Sam Taylor, with work on display.  The school would like to thank all those that made contributions to the school through their work, and everyone who helped put the exhibition together.

 

JAM IT!!

Mazabuka is unquestionably the sugar capital of Zambia and as there are zillions of  mulberries, strawberries, guavas and tomatoes around at this time of year, I thought we could simply combine the two  (fruit and sugar) and stick to something totally apolitical this month   ... like making jam!

 

MULBERRY JAM - requires 1 kg of mulberries, 1 lemon and 750 g sugar. Simply rinse the mulberries gently so that no juice is lost.  Put the mulberries into a pan and simmer until soft. Then add grated lemon rind and lemon juice and stir in the sugar.  Cook over low heat until sugar has dissolved.  Boil hard until setting point has been reached, pour into sterilized jars and cover.

 

STRAWBERRY JAM - You will need 2 kg of strawberries, 1 tsp of citric or tartaric acid and 1.75 kg of sugar.  Hull strawberries and wash them.  Put into a pan with the acid and simmer for 30 mins until fruit is soft.  Stir in the sugar over low heat until dissolved and then boil hard until setting point is reached.  Cool for 15 minutes and then stir well to distribute the fruit.  Pour into sterilized jars and cover.

 

GUAVA JELLY - For every 500 g fruit, you need 250 ml water.  Wash and quarter the guavas (don't peel)  Boil the fruit and water rapidly, uncovered, stirring now and then..  When fruit is soft, pour slowly through a sieve.  Discard pips and pulp.  For every  cup of juice use three quarters of a cup of sugar. Stir sugar into guava juice and add the juice and bagged (put in a muslin bag) pips from two lemons. Boil until setting point has been reached.  Bottle in sterilized jars.

 

TOMATO  CHILLI  JAM (excellent for a braai) - You need 1 kg ripe tomatoes; 4 - 6 large red chillies;  6 cloves of garlic;  1Tbsp chopped root ginger; 500 g. sugar; half a cup red wine vinegar, salt to taste.  Blend together the tomatoes, chillies, garlic and ginger.  Cook together with sugar and vinegar and salt  for about an hour stirring occasionally.  Bottle in sterilized jars.
